N.'s Collard Greens Soup

1 large bunch collard greens
2 T Olive Oil
1/2 t mustard powder
1 cup milk
3-4 cups mushroom broth
2 garlic cloves
salt&pepper to taste

  1. Fry stems in Olive Oil over medium heat.
  2. Add mustard, pressed garlic, salt & pepper.
  3. Add leaves until wilted.
  4. Add milk and broth. Boil for 10min. 
  5. Puree and serve.
