What a lovely combination of flavors, so smooth and fresh and fruity.
Ingredients
750g carrots
40g ginger
3 T vegetable oil
500ml vegetable stock
400ml coconut milk
1 mango
chili powder, salt, lemon juice to taste
2 green onions gut in fine rings
handfull cilantro
fresh chili in thin stripes
- Peel and chop carrots, ginger and onions.
- Heat oil in a pot, add vegetables and when hot add broth.
- Let bubble for 12min until vegetables are soft.
- Puree everything.
- Add Chili, coconutmilk and at last the mango pureed.
- Add salt and lemon juice to taste. Potentially add a bit of honey or brown sugar.
- Serve in bowls and decorate with cilantro spirgs, chili stripes and green onion rings.
