Carrot-Mango-Coconut-Soup

What a lovely combination of flavors, so smooth and fresh and fruity.


Ingredients
750g carrots
40g ginger
3 T vegetable oil
500ml vegetable stock
400ml coconut milk
1 mango
chili powder, salt, lemon juice to taste
2 green onions gut in fine rings
handfull cilantro
fresh chili in thin stripes

  1. Peel and chop carrots, ginger and onions.
  2. Heat oil in a pot, add vegetables and when hot add broth.
  3. Let bubble for 12min until vegetables are soft.
  4. Puree everything.
  5. Add Chili, coconutmilk and at last the mango pureed.
  6. Add salt and lemon juice to taste. Potentially add a bit of honey or brown sugar.
  7. Serve in bowls and decorate with cilantro spirgs, chili stripes and green onion rings.
