My version of Vietnamese Banh Mi

I read about this Vietnamese Sandwich and just had to try it out. I really liked how the different ingredients mix.

Ingredients
Pickled daikon and carrots (this will be way too much, but can be used later on)
1 cup water
1/2 cup sugar
1/2 cup rice vinegar
1 cup julienned carrot
1 cup julienned daikon
Pork
1 T vegetable Oil
1 T finely chopped onion
6 oz ground pork (I used ground beef)
1 T chinese 5 spice mix
1 finely chopped garlic
Sandwich
4x 25cm baguettes
3/4 cup Mayonnaise (homemade)
4 slices thinly cut ham
4 t soysauce
1/2 cup finely chopped fresh cilantro
cucumber slices
Shichimi


To make the pickles
  1. Boil water, sugar and vinegar until sugar dissolves and pour over julienned carrots and daikon.
  2. Marinate it for 30min - 24hrs in the fridge overnight.
To make the pork
  1. Heat the oil over medium heat, fry the onions until soft,
  2. add the ground pork, and the spices
  3. cook until brown and crumbly.
To assemble the sandwiches
  1. Preheat the oven to 400F.
  2. Slice the baguettes lengthwise and slather with mayonnaise. Bake for 7-9min until mayonnaise is bubbly and the bread warm and crunchy.
  3. Remove baguettes from oven and immediately fill with pork, soy sauce, ham, pickles, cucumber slices, cilantro and season with shichimi.
  4. Enjoy!
