Ingredients
Pickled daikon and carrots (this will be way too much, but can be used later on)
1 cup water
1/2 cup sugar
1/2 cup rice vinegar
1 cup julienned carrot
1 cup julienned daikon
Pork
1 T vegetable Oil
1 T finely chopped onion
6 oz ground pork (I used ground beef)
1 T chinese 5 spice mix
1 finely chopped garlic
Sandwich
4x 25cm baguettes
3/4 cup Mayonnaise (homemade)
4 slices thinly cut ham
4 t soysauce
1/2 cup finely chopped fresh cilantro
cucumber slices
Shichimi
To make the pickles
- Boil water, sugar and vinegar until sugar dissolves and pour over julienned carrots and daikon.
- Marinate it for 30min - 24hrs in the fridge overnight.
- Heat the oil over medium heat, fry the onions until soft,
- add the ground pork, and the spices
- cook until brown and crumbly.
- Preheat the oven to 400F.
- Slice the baguettes lengthwise and slather with mayonnaise. Bake for 7-9min until mayonnaise is bubbly and the bread warm and crunchy.
- Remove baguettes from oven and immediately fill with pork, soy sauce, ham, pickles, cucumber slices, cilantro and season with shichimi.
- Enjoy!
