Tsukimi Udon
Ingredients:
- 1 packackage dashi
- 5 cups dashi
- 1/3 cup soy sauce
- 3 tbls. mirin
- 4 eggs
- 4 green onions, thinly sliced or shiso
- 1 cup dried shiitake soaked with 1cup boiling water
- Shichimi for taste
- Boil noodles.
- While noodles are cooking, boil together dashi, soy sauce, mirin, shitake.
- Divide noodles into four oven-proof bowls. Ladle soup over noodles and carefully crack one egg on top each bowl of noodles.
- Place the bowls in a microwave on high for 50 seconds or in a pre-heated 350 degree oven for three minutes or until the egg barely sets.
- Garnish with green onions, shiso and shichimi and serve.
