Tsukimi Udon

Ingredients:
  • 1 packackage dashi
  • 5 cups dashi
  • 1/3 cup soy sauce
  • 3 tbls. mirin
  • 4 eggs
  • 4 green onions, thinly sliced or shiso
  • 1 cup dried shiitake soaked with 1cup boiling water
  • Shichimi for taste
  1. Boil noodles.
  2. While noodles are cooking, boil together dashi, soy sauce, mirin, shitake.
  3. Divide noodles into four oven-proof bowls. Ladle soup over noodles and carefully crack one egg on top each bowl of noodles.
  4. Place the bowls in a microwave on high for 50 seconds or in a pre-heated 350 degree oven for three minutes or until the egg barely sets.
  5. Garnish with green onions, shiso and shichimi and serve.
